When it comes to sides and condiments, we know all about the sauces and dips and spreads, but what is often ignored is a relish. For the Indian palate, the relish is no stranger, but to the world, the relish has a whole plethora of possibilities. Generally, the relish is associated with cucumber as its main ingredient but as far as imagination goes, so does the ingredient list for relish. For the novice foodie, a relish is a dish, often consumed as a condiment, which has been prepared by pickling or cooking. What makes the relish different from other sauces and condiments is that the consistency of the relish is never smooth – that is, you won’t be dipping into a puree of ingredients.
